Ingredients
  • 8 SLICES THICK-CUT BACON, CUT INTO 2 INCH PIECES
  • 1 POUND ELBOW MACARONI
  • 2 TBSP. ALL PURPOSE FLOUR
  • 1 1/2 CUP MILK
  • 1/2 TSPN. HOT SAUCE
  • 1/2 TSPN.DRY MUSTARD
  • SALT AND FRESHLY GROUND WHITE PEPPER
  • 3 CUPS SHARP CHEDDAR CHEESE

Directions
  1. COOK PASTA IN LARGE POT SALTED WATER
  2. DRAIN PASTA AND SET ASIDE
  3. COOK BACON OVER MEDIUM HEAT, STIRRING OCCASIONALLY, UNTIL BROWNED AND CRISP, THEN USING A SLOTTED SPOON, REMOVE BACON TO A PAPER TOWEL PLATE AND DRAIN
  4. DISCARD ALL BUT 2 TABLESPOONS BACON GREASE
  5. PLACE THE PAN WITH THE BACON GREASE BACK ON THE STOVE OVER LOW HEAT AND STIR IN FLOUR
  6. COOK 1 MINUTE
  7. GRADUALLY WHISK IN THE MILK AND SEASON WITH HOT SAUCE, DRY MUSTARD, SALT AND PEPPER
  8. COOK UNTIL THE SAUCE IS SMOOTH UNTIL SLIGHTLY THICKENED, WHISKING CONSTANTLY, ABOUT THREE MINUTES.
  9. ADD CHEESE AND STIR UNTILTHE CHEESE MELTS COMPLETELY
  10. STIR IN THE COOKED MACARONI AND COOK 3 MINUTES, OR UNTIL HEATED THROUGH
  11. STIR IN BACON
  12. EAT
