ZIPPY SMOKY MAC AND CHEESE

- 8 SLICES THICK-CUT bacon, CUT INTO 2 INCH PIECES shopping list
- 1 POUND elbow macaroni shopping list
- 2 TBSP. ALL PURPOSE flour shopping list
- 1 1/2 CUP milk shopping list
- 1/2 TSPN. hot sauce shopping list
- 1/2 TSPN.dry mustard shopping list
- salt AND FRESHLY GROUND white pepper shopping list
- 3 CUPS sharp cheddar cheese shopping list
How to make it
- COOK PASTA IN LARGE POT SALTED WATER
- DRAIN PASTA AND SET ASIDE
- COOK BACON OVER MEDIUM HEAT, STIRRING OCCASIONALLY, UNTIL BROWNED AND CRISP, THEN USING A SLOTTED SPOON, REMOVE BACON TO A PAPER TOWEL PLATE AND DRAIN
- DISCARD ALL BUT 2 TABLESPOONS BACON GREASE
- PLACE THE PAN WITH THE BACON GREASE BACK ON THE STOVE OVER LOW HEAT AND STIR IN FLOUR
- COOK 1 MINUTE
- GRADUALLY WHISK IN THE MILK AND SEASON WITH HOT SAUCE, DRY MUSTARD, SALT AND PEPPER
- COOK UNTIL THE SAUCE IS SMOOTH UNTIL SLIGHTLY THICKENED, WHISKING CONSTANTLY, ABOUT THREE MINUTES.
- ADD CHEESE AND STIR UNTILTHE CHEESE MELTS COMPLETELY
- STIR IN THE COOKED MACARONI AND COOK 3 MINUTES, OR UNTIL HEATED THROUGH
- STIR IN BACON
- EAT
