Today childrens day and the kids voted for a fresh fruit cake . This cake is quite ez to make and without much effort will look presentable too ....

Ingredients
  • 200 g white sugar
  • 4 eggs
  • 1/2 C mayo
  • 1/3 C freshly squeezed orange juice
  • 1/4 tsp orange zest
  • 200 g cake flour
  • Strawberry food color ( optional )
  • Fresh fruits of your choice and 1 white agar agar packet with 500 ml water and sugar to taste

Directions
  1. Pre heat the oven at 180 deg C .
  2. Beat the eggs and sugar until dropping consistency .
  3. Add the mayo and juice .
  4. Beat on low medium speed until creamy .
  5. Add the zest and beat 30 secs.
  6. Add a drop of food colur and beat 20 secs .
  7. Fold in the flour .
  8. Pour into a greased 22 cm pan .
  9. Bake for 30 mins .
  10. Once done , arrange the fruits on top .
  11. Boil the agar agar pwd in water with sugar .
  12. Pour over the cake .
  13. Once cool , chill it for 15 mins .
