How to make it

  • Make your rice .
  • Fry chicken in olive oil with some garlic, lately I've been just braising the chicken on both sides then finishing it off in the oven until done
  • Clean and destem spinach
  • In another fry pan medium size stir fry spinach with a little olive oil and a bunch of garlic ( Everyone has different tastes when it comes to garlic choose your own amount )
  • Just before or right when chicken is done squeeze juice from one lemon over it.
  • Make a bed of rice on plate , pile some spinach on bed of rice then place a chicken breast over that added more spinach on tope then spinkle with feta cheese to your liking.

    Sounds simple and great, but I personally dislike feta so I'd substitute it for cheddar or babybel. I have this recipe to make yogurt into cheese, maybe I'll use that...whaddya think? Stuff cherry tomatoes or grape leaves with it and kinda put them around the chicken all fancy-like? Would you eat that?

    This looks tasty. Browning the chicken in olive oil then transferring to the oven is the way a restaurant would do it. Olive oil has a low smoke point, meaning it smokes at a low temperature. And besides, who wants to stand there when you can toss it in the oven to finish? Good post and looking froward to being your cooking friend. If I can answer any questions, just ask.
