If you like sweet, cakey cornbread this isn't for you. But I'd no more put sugar in my cornbread than put ketchup on my steak, and if you like it that way, try this simple recipe that has been one of my wife's staples for more than 50 years.l

BTW, have you all had any luck (lately) finding
really fine ground cornmeal for 'hoecake' ?
(I like to make it on griddle on stove top)

Great! Like you, I don' like things too sweet. When I do sweeten, I use Stevia instead of sugar, even though I am not a diabetic; I just prefer natural sweetness === FIVE! :+D

My wife just asked me if I said to use stone ground meal. I said that I put a note to use it if you could get it. She said that she doesn't consider it an option, that she doesn't think it would be good with plain old grocery store corn meal, although she's just guessing because she's never made with anything but self-rising stone ground meal. I'll edit the recipe to show you need self-rising meal.
