Ronnys Baked Fish With Cherry Tomatoes Recipe

Ingredients

4 pieces of filleted white fish, (hake, sole)

1 large sliced onion,

1/2kg cherry tomatoes

juice of 1 lemon

1/2 cup of olive oil

Directions

Spread out fillets on the bottom of Pyrex baking dish.

Spread out sliced onion on top of fish.

Spread cherry tomatoes on top of onions.

Pour olive oil and lemon juice over everything.

Seal with Pyrex cover or Aluminium foil.

Bake in medium oven, (180*c), for 30 minutes.

So simple! I have done something similar but added a few springs of fresh oregano on top before drizzling the olive oil. A nice Mediterranean flavor.
