Sounds like this is a lengthy prep but it really isn't. This is my recipe and I was surprised at how tasty it was. I think of these things when I can't sleep...which sometimes is good and sometimes not. You be the judge on this one.

Ingredients
  • Ground beef ( not too fat and not too lean)
  • 2 slices texas toast bread or any bread sliced thickly
  • 1/2 onion grated finely
  • 1 small pkg grated mexican cheese or cheese of preference
  • salt to taste
  • greound pepper to taste
  • 2 squirts deli mustard
  • dried Itralian seasoning
  • 1 large can evaporated milk
  • chopped fresh parsley
  • 1 cup Italian grated cheese
  • 1 full cup of breadcrumbs

Directions
  1. preheat oven to 325
  2. Place beef in large bowl
  3. add bread and pour evaporated milk over bread to soak
  4. Grate in onion
  5. add parsley
  6. Italian seasong to taste
  7. hot to sweet chile to taste
  8. mustard
  9. grated parmesan
  10. salt and pepper to taste
  11. --------------
  12. The Fun Part is to mush it all together
  13. I have always used my hands but you do what is best for you
  14. ---------------
  15. 2 equal (sort of) pieces of wax paper
  16. lay 1 pc on counter
  17. Place half meat mixture in a 1' flat square on paper
  18. Pat grated mexican cheese on top
  19. Cover with the rest of meat mixture
  20. lift wax paper to cover edge
  21. Roll and remove paper ( as in pic)
  22. refrigerate 5 min
  23. This makes it easier to place in lighty greased (crisco) meatloaf pan
  24. ------------
  25. Bake 45-50 minutes at 325F

  27. That's it!

Another great recipe!


I made this the other night it was AWESOME! I ended up having to pack it in the pan a little differently. My Husband called in the middle of prep time with a dead battery... HEHEHE so I ended up throwing it together quickly. BUT MAN O MAN IT WAS GOOD. the cheese melted out just great!!!
