Mexican skillet

- 1 pound ground beef or turkey shopping list
- 1/2 cup chopped onion shopping list
- 1 (1 1/4 oz) pkg taco seasoning shopping list
- 1 1/2 cups water shopping list
- 1 cup frozen corn shopping list
- 1 (14 oz) can stewed tomatoes shopping list
- 1 1/2 cups uncooked instant rice shopping list
- 1 cup shredded cheese (anything works, just use your favourite) shopping list
How to make it
- In a large skillet, brown beef and onions, drain
- Stir in remaining ingredients except rice and cheese
- Bring to a boil
- Stir in rice
- Reduce heat to low
- Cover and simmer 5 - 7 minutes, or until liquid is absorbed, stirring occasionally,
- Remove from heat, fluff mixture with fork.
- Sprinkle with cheese
- Cover, let stand, 3 - 5 minutes, until cheese is melted
