Roman Meatloaf Recipe
Another tried and true recipe that has been in the family archive for years and years and years. I remember helping my mother make this when I was very young. Nice twist on the standard every day meatloaf. Hope you enjoy as much as we do.

Ingredients
  • 10-3/4 ounce condensed golden mushroom soup
  • 1-1/2 pounds ground beef
  • 1/2 pound salami chopped
  • 1/2 cup fine dry breadcrumbs
  • 1/3 cup grated Parmesan cheese
  • 1 egg slightly beaten
  • 1 large clove garlic minced
  • 1/2 cup water
  • 2 tablespoons chopped parsley
  • 1/8 teaspoon grated lemon peel

Directions
  1. Mix thoroughly 1/2 cup soup, beef, salami, bread crumbs, parmesan, egg and garlic.
  2. Shape firmly into loaf then place in shallow baking pan.
  3. Bake at 375 for 1 hour then remove loaf to serving platter and keep warm.
  4. Spoon off fat saving drippings.
  5. On top of range in baking pan stir remaining soup, water, parsley, and lemon peel into drippings.
  6. Cook stirring to loosen browned bits then serve with meatloaf.

Dry salami...my favorite! This one's a winner in my book! Thanks for sharing. - Natalie


The ingredients are similar to a Swedish Meatball recipe that I make from a Bed & Breakfast...the condensed soup tenderizes the meat and makes it very juicy. I would have never thought of putting chopped salami into a meatloaf though. Interesting...now you've got my mind thinking up other creative additions to my familiar standby!
