Italian Cream Cake

- 1 stick butter or margarine shopping list
- 1/2 c. vegetable shortening shopping list
- 2 c. sugar shopping list
- 5 egg yokes shopping list
- 2 c. all purpose flour shopping list
- 1 tsp. soda shopping list
- 1 c. buttermilk shopping list
- 1 tsp. vanilla shopping list
- 1 small can coconut (3 1/2 oz. flaked) shopping list
- 1/2 c. chopped nuts shopping list
- 5 egg whites beaten stiffly shopping list
How to make it
- Cream butter, shortening and sugar, add egg yokes and beat well.
- Sift flour, measure and sift again with soda.
- Add flour atlernately with buttermilk to the creamed mixture.
- Stir in vanilla then coconut flakes and nuts.
- Fold in egg whites.
- Pour batter into 3 greased and floured 8 inch layer cake pans or 2 9 inch pans.
- Bake 350 for 25 minutes or until done.
- Cool in pans for about 5 minutes then turn out on racks.
- When thoroughly cool frost with cream cheese frosting.

- Cream Cheese Frosting
- 1 8 oz. pkg. cream cheese softened at room temp.
- 1/2 stick butter
- 1 lb. box powdered sugar
- 1 tsp. vanilla
- 1/2 c. chopped nuts
- Beat cheese and margarine till smooth, add sugar and mix well.
- Add vanilla and beat until smooth.
- Spread between layers, over top and sides.
- Sprinkle chopped nuts on top.

This was the type of cake I chose for our wedding cake! I actually don't like coconut, so they omitted it and it was fabulous! I may have to make this on our anniversary next year! Thx for the post!
