Ingredients

How to make it

  • Prepare pasta according to package directions. Al dente is best.
  • Place tomatoes in a blender or food processor and blend until very smooth and light pink, about 1 minute.
  • Set aside.
  • Heat the oil in a large skillet over medium heat.
  • Add the garlic and red pepper flakes and sauté for 30 seconds.
  • Add the peas, roasted red peppers and basil and stir 1 minute.
  • Add the pureed tomatoes and heat just to boiling.
  • Remove sauce from heat.
  • Drain the pasta and transfer to skillet.
  • Stir over medium heat until pasta is well mixed with sauce.
  • Divide pasta between two serving bowls.
  • Sprinkle with grated Parmesan cheese and serve immediately
  • That's it! Mangia bene!
