Enjoy this little treat when you want a quick snack. The kids will love them cut into animal shapes.

Ingredients
  • 1 1/4 cups all-purpose flour
  • 1 1/2 cups grated sharp cheese
  • 2/3 cup butter - cut into small pieces
  • 1 egg yolk
  • sesame seeds for sprinkling

Directions
  1. Pre-heat oven to 400 degrees
  2. Lightly grease several cookie sheets
  3. Mix the flour & cheese together in a bowl
  4. Add the butter to the flour mixture & mix with fingers until combined
  5. Stir in the egg yolk & mix to form a dough
  6. Wrap the dough in plastic wrap & chill in the fridge for about 30 mins
  7. On a lightly floured surface, roll out the dough thinly
  8. Cut out 2 1/2 inch rounds, re-roll the trimmings to make about 35 rounds
  9. Place on cookie sheets & sprinkle the sesame seeds over the tops
  10. Bake for about 20 mins, until the sables are a light, golden color
  11. Transfer to a wire rack to cool
