How to make it

  • Pre-heat oven to 400 degrees
  • Lightly grease several cookie sheets
  • Mix the flour & cheese together in a bowl
  • Add the butter to the flour mixture & mix with fingers until combined
  • Stir in the egg yolk & mix to form a dough
  • Wrap the dough in plastic wrap & chill in the fridge for about 30 mins
  • On a lightly floured surface, roll out the dough thinly
  • Cut out 2 1/2 inch rounds, re-roll the trimmings to make about 35 rounds
  • Place on cookie sheets & sprinkle the sesame seeds over the tops
  • Bake for about 20 mins, until the sables are a light, golden color
  • Transfer to a wire rack to cool
