Strawberry Bread Recipe

Ingredients

10 oz package of frozen strawberries, thawed but not drained

2 eggs

3/4 c oil

1 1/2 c flour

1/2 tsp baking soda

1 c sugar

1 tsp cinnamon

Directions

Puree strawberries in a blender.

Whisk eggs and oil in a small bowl.

In a large bowl, combine the flour, soda, sugar and cinnamon.

Add the strawberries to the flour mix and beat well with a spoon.

Add the egg and oil and beat well.

Pour into a greased 9x5 loaf pan.

Bake at 325 for 70 minutes.

Remove loaf from pan 5 minutes after taking the loaf from the oven and cool completely on a rack.

Nice and moist. Was concerned about the lack of flour and excess sugar. Didn't have the strawberries but had a pint of blueberries that I needed to use in something. Took longer to bake. Probably my fault because of the juice of the berries. Will bake this again next year when my strawberries come back in season.

Comes in right behind garlic. :-) I almost bought a pkg. of frozen strawberries this morning, then remembered I had half a basket of fresh ones I needed to use up first.
