Another one of those "use whatcha got" suppers that turned out really good! Did I mention I love cheese?

Ingredients
  • 1 Roasted Rotisserie chicken, deboned and shredded to bite size pieces (I used the Apple wood flavored one)
  • 1 small can of mushrooms, drained
  • 1 small can of sliced black olives, drained
  • Bacon grease (I always save my bacon grease for just such an occasion as this, butter would work fine, too.)
  • 1 can of mushroom soup
  • 1 cup of milk
  • 1/2 - 1 cup shredded Velveeta
  • 1 teaspoon (more or less) of Tony Chachere's Creole Seasoning
  • Linguine, prepared according to directions

Directions
  1. Heat bacon grease in a large skillet.
  2. Add mushrooms, olives and shredded chicken.
  3. Saute until heated through.
  4. Add soup and milk.
  5. Heat through, stirring to incorporate.
  6. Stir in cheese.
  7. Serve over Linguine, with a nice green salad, garlic bread and white wine.

Mmmmmm I'll have fresh bacon grease when I make this 'cause I'm throwing in the crumbled bacon too. I have to leave the olives whole because I love them but hubby does not and they need to be big enough for him to pick out -- that's okay, it's more for me! This is a good recipe as these are items that I usually have on hand. Thanks for posting.


If hubby dislikes the olives, try roasted red peppers.. or a can of fire roasted tomatoes and a little garlic.. use whatcha got.. use whatcha like!


This sounds sooooo good. Although, I'll do a lowfat version of it, I'm sure it will still taste great!


Outstanding recipe - yummm. I save my bacon grease, too - just as my momma and grandma did - and use it all the time to punch up the flavors of sauteed/fried goodies, veggies and gravies, et al.
