My Grandma always made the coconut cake too. Now I do.. We always had to use Fresh coconut and used the coconut milk to weep over the finished cake for about 3 days.. I would post it, but it's hard to put to paper what is in my head! There never was a written recipe for this.

This sounds so good. Thanks for posting. I love these types of recipes. Those that are passed down through the family. When we post them do you not think of that person the whole time you are doing so.Now to find the frozen coconut. I haven't seen any around here hopefully I will be successful.

HI Gem!
Can you sub dessicated or packaged coconut for frozen? Up here in the frozen north I have never seen frozen coconut. Hope all is well with y'all.
