Ingredients

How to make it

  • Follow the directions on back of cake mix box and bake in two 9 inch round cake pans.
  • When done, let cool completely and take dental floss or fishing line and split the layers in half.
  • Put the 2 pkgs.of frozen coconut in a seperate bowls and let thaw.
  • After the coconut thaws stir in with 1 pkg of the coconut the sour cream and sugar.
  • Mix real good.
  • Set aside 1/2 cup of this mixture.
  • Spread the rest between the layers.
  • Mix 1/2 cup reserved mixture and the cool whip and spread all over the cake.
  • Take the other package of frozen coconut that is already thawed and sprinkle all over the cake.
  • Put the cake in air tight container for THREE days in fridge before serving. Store leftovers in fridge, IF there are any!!.

    HI Gem!
    Can you sub dessicated or packaged coconut for frozen? Up here in the frozen north I have never seen frozen coconut. Hope all is well with y'all.

    I just read a book where the grandmother made a Three Day Coconut Cake every Christmas...and I just couldn't imagine why a cake would take 3 days!! Now I have the recipe! Thanks, Gem!!

    This sounds so good.Thanks for posting. I love these types of recipes.Those that are passed down through the family. When we post them do you not think of that person the whole time you are doing so.Now to find the frozen coconut. I haven't seen any around here hopefully I will be successful.

    My Grandma always made the coconut cake too. Now I do.. We always had to use Fresh coconut and used the coconut milk to weep over the finished cake for about 3 days.. I would post it, but it's hard to put to paper what is in my head! There never was a written recipe for this.
