How to make it

  • Mix together parm cheese, Italian seasoning, seasoned salt and garlic pepper
  • Rinse chicken and pat dry
  • Melt margarine with a drizzle of EVOO in electric skillet
  • Dredge chicken in parm mixture and place in skillet
  • Brown on each side (about 6-8 minutes)
  • While chicken is browning, melt together margarine and EVOO in nonstick skillet
  • Add onions, garlic, mushrooms, spinach and red pepper flakes
  • Cook until onions are translucent and spinach is wilted (or defrosted)
  • Place onion/spinach mixture on chicken
  • Mix together Soup, wine/broth, mayo, cream cheese, sour cream and italian seasoning
  • Pour over chicken and veggies
  • Cover and simmer about 30 minutes
  • ** My electric skillet comes off the base, and goes into the oven, so, I add shredded cheese and stuffing mix, place in the oven until browned - about 6-8 minutes ** I have also added sliced tomatoes, then the cheese and stuffing mix before placing in the oven**
