How to make it

  • Preheat oven to 350 degrees.
  • Mix batter ingredients in blender or food processor until well blended.
  • Pour 3/4 cup of the batter into a greased 8 x 8 inch pan, tilting pan to distribute evenly.
  • Bake for about 10 minutes, until set but not overly browned.
  • While batter is baking, mix filling ingredients in medium bowl until well blended.
  • Spread evenly over baked bottom layer.
  • Mix remaining batter again to blend, then carefully pour it over cheese layer and spread with spatula to cover all the filling.
  • Return to oven and bake for another 30 to 40 minutes, until the top is puffed, set, and lightly browned.
  • Wait 5 to 10 minutes before serving, then cut into squares and serve with sour cream and jam.
  • Makes 4 servings.
