Blintz Casserole

- Batter: shopping list
- 2 large eggs shopping list
- 3/4 cup milk shopping list
- 1 Tbsp. sour cream shopping list
- 2 Tbsp. butter, melted shopping list
- 1/2 tsp. vanilla shopping list
- 2/3 cup flour shopping list
- 1 Tbsp. sugar shopping list
- 3/4 tsp. baking powder shopping list
- Filling: shopping list
- 1 lb. small curd cottage cheese shopping list
- (California style is best) shopping list
- 1 large egg shopping list
- 2 Tbsp. sugar shopping list
- 1 Tbsp. lemon juice shopping list
- Garnishes: shopping list
- sour cream shopping list
- apple sauce shopping list
- jam shopping list
How to make it
- Preheat oven to 350 degrees.
- Mix batter ingredients in blender or food processor until well blended.
- Pour 3/4 cup of the batter into a greased 8 x 8 inch pan, tilting pan to distribute evenly.
- Bake for about 10 minutes, until set but not overly browned.
- While batter is baking, mix filling ingredients in medium bowl until well blended.
- Spread evenly over baked bottom layer.
- Mix remaining batter again to blend, then carefully pour it over cheese layer and spread with spatula to cover all the filling.
- Return to oven and bake for another 30 to 40 minutes, until the top is puffed, set, and lightly browned.
- Wait 5 to 10 minutes before serving, then cut into squares and serve with sour cream and jam.
- Makes 4 servings.
