This is an, oh, so easy, quick salsa recipe that friends will wolf! You can whip it up in a snap ~ it tastes like you put tons more time into it than you actually do. Have fun with it, make it your own, and, as always, enjoy!

Ingredients
  • 2 large ripe tomatoes, diced w/ juice (use large can if fresh not available)
  • 2 cans Rotel diced tomatoes w/ green chillis, rinsed and drained
  • 1 onion, diced (Choose size depending on your preferences; I use my food processor and dice these with the pulse setting.)
  • Fresh chopped cilantro (about a handful)
  • 2 cloves garlic, finely minced (You can substitute 1 tbs. minced garlic here.)
  • Juice of one lime
  • 2-3 diced jalapeno peppers or variety of your choice (I love to use pablanos.)
  • Optional:
  • 1 can black beans, rinsed and drained
  • 1 can shoepeg or yellow corn
  • Whatever else you choose to add or delete, don't omit the cilantro! It makes all the difference!

Directions
  1. Mix all ingredients well and serve with your favorite chips ~ we love home-fried flour tortillas. Watch it disappear! Yumm!
  2. Tip: I used to hand chop / mince everything w/ my favorite chef’s knife. Now, my favorite chef’s knife is my sweet Cuisinart food processor! Ok, chefs, don’t cringe! I always set the processor to pulse and take it slowly. It cuts my prep time into almost no time! Plus, if I’m in a hurry, I can still enjoy prepping fresh ingredients w/o all of the extra time in hand chopping, mincing, etc.

Black beans and corn... This salsa sounds really home-made!


I really think you'll love it. It's easy as home-made sin and has a good fresh taste. The cilantro makes all the difference, too. My girlfriend introduced me to Rotel tomatoes and chilis last summer; when she told me, I didn't see the big deal, but once I used them, I had to agree that there was just something about them . . . let me know what you think after you try it. Try frying up some flour tortillas ~ I like to use plain and spinach; it makes a nice display, and the taste is wow! ;o) BTW, thanks for your encouragement on the site; your positiveness and helpfulness triggered me to 'get on with it' and start producing some of my favorite recipes. You rock, girl! d

Great minds think alike! This sounds like my recipe! The only thing is I add cumin to mine. My eldest took it to work and they told me I needed to market it!! Good Stuff!!
