How to make it

  • Combine all dressing ingredients in a small bowl or jar, set aside.
  • Heat 2 tbsp of water in a large non-stick pan over medium-high heat.
  • Combine broth, juice, vinegar, salt and pepper, set aside.
  • Add beets to hot pan and cook, stirring occasionally, until water evaporates.
  • Add broth / juice mixture a little at a time, allowing liquid to evaporate (mostly) between additions.
  • Remove from heat and immediately toss with dressing.
  • Serve over a bed of lettuce.

    Sounds delicious. I like that there is no oil in this salad. :-) Defintely will be giving this one a try. I love beets! The dressing alone sounds great -- sweet and tangy w/ lots of flavour.
