Corn Ice Cream Recipe

How to make it

  • Peel and clean the corn. Simmer until kernels are tender. Allow to cool, and cut kernels from the cob. Place in a blender with the sugar and light cream and blend until pureed. Place in ice cream maker with the other ingredients. Churn according to manufacturer's instructions.

    I was fortunate enough to have lived in Mexico for 3 years. The ice cream there is unbelievable! Corn ice cream was one of my favorites. I'm so glad to have finally found a recipe for it. Thanks for the memories!

    I ADORE corn ice cream, I've only had it here in China. If I ever move somewhere I can't buy it, and I own an ice cream maker I'll definitely have to make it!
