I was surprised to see Corn Ice Cream in Mexico, but it is actually delicious

Ingredients
- 3 ears fresh sweet corn
- 1 cup sugar
- 1 cup light cream
- 1 teaspoon vanilla
- 1 pint heavy cream
Directions
- Peel and clean the corn. Simmer until kernels are tender. Allow to cool, and cut kernels from the cob. Place in a blender with the sugar and light cream and blend until pureed. Place in ice cream maker with the other ingredients. Churn according to manufacturer's instructions.

I was fortunate enough to have lived in Mexico for 3 years. The ice cream there is unbelievable! Corn ice cream was one of my favorites. I'm so glad to have finally found a recipe for it. Thanks for the memories!
