Ingredients
  • 1 stick butter
  • 1 Cup real maple syrup (not pancake syrup)
  • 3-4 ripe bananas
  • 1 cup chopped pecans or walnuts
  • 1 tsp. vanilla
  • 1 recipe pancake mix (such as Bisquick)

Directions
  1. Preheat oven to 350 degrees.
  2. Move top rack of oven to high middle section.
  3. Melt butter in heavy 10-11 inch skillet in oven. (I use mycast iron skillet!)
  4. Brush sides of pan with melted butter.
  5. Add maple syrup and let cool a couple of minutes.
  6. Slice bananas evenly over the syrup and cover entire bottom of pan with bananas.
  7. Do not slice bananas too thin because they will shrink some during baking.
  8. Sprinkle pecans or walnuts over bananas.
  9. Mix pancake mix and add vanilla.
  10. Pour batter gently over bananas and spread evenly.
  11. Bake in oven about 30 minutes until top browns.
  12. Remove from oven and let cool 5 minutes.
  13. Invert onto a large platter. To do this, place a large platter on top of frying pan and with one quick motion turn upside down.
  14. Dust with powdered sugar, slice and serve.

I'm loving breakfast recipes lately! This sounds so good! I'll make this on Saturday!


Amazingly Good!!! I only used 1/2 the butter and I omitted the nuts because my husband doesn't like them. Everything else I did as written. I used a homemade pancake batter...to equal 10 pancakes. I baked this for 40 minutes. The top never browned so I just baked it til the edges looked really cooked. We couldn't stop eating this delicious breakfast! This is a must try recipe!!! I hope you like my photo!


This was delicious! The type of breakfast dish that makes me want to open a bed & breakfast! I realized I only had a scant 3/4 maple syrup when I started, so I sprinkled a heaping tbsp of brown sugar over the bananas and nuts. I made with walnuts, but pecans would be excellent. A lovely and hearty breakfast dish - Thanks JM! Another winner from you! :)
