Spumoni Bars

- 1/2 cup powdered sugar shopping list
- 1/2 cup shortening shopping list
- 2 eggs, separated shopping list
- 1 cup all-purpose flour* shopping list
- 1/2 cup ground almonds, if desired shopping list
- 1 can (14oz) sweetened condensed milk shopping list
- 1/4 cup lemon juice shopping list
- 1 teaspoon vanilla shopping list
- 1/2 cup chopped maraschino cherries, drained shopping list
- 1/2 cup granulated sugar shopping list
- 1/2 cup roasted diced almonds shopping list
How to make it
- Heat oven to 350 degrees F
- Beat powdered sugar, shortening and egg yolks until blended
- Stir in flour and ground almonds
- Press in ungreased baking pan, 13x9x2 inches.
- Bake 15 minutes
- Beat milk, lemon juice & vanilla
- Stir in cherries
- Beat egg whites in small mixer bowl until foamy
- Beat in granulated sugar, 1 tablespoon at a time; continue beating until stiff & glossy. Do not underbeat.
- Spread cherry mixture over baked layer.
- Carefully spread meringue over cherry mixture; sprinkle with diced almonds.
- Bake 20 minutes
- Cut into bars, 2x1 inch, while warm
- Store in refrigerator
