These are yummy light cookies, that everyone seems to ask for during the holidays, The recipe was given to me by my husband's aunt.

Ingredients
  • 3 Eggs
  • 1/2 cup sugar
  • 1/2 cup veg. oil
  • 3 teaspoons lemon extract -plus some for frosting
  • 3 teaspoons of baking powder
  • 3 cups of flour
  • Icing
  • confectionary sugar
  • lemon extract
  • tbsp milk
  • sprinkles

Directions
  1. Beat eggs, sugar and oil
  2. add in baking powder
  3. slowly add in flour
  4. take by tablespoon ful and roll into a little log and twist one over the other almost like a braid
  5. bake 12-15 minutes on 350
  6. once cool mix together icing ingredients dip in and then sprinkle

I love making lemon cookies and this recipe is different than the one I usually make. I would love to try this one. How much flour does it call for? It was not listed in the list of ingredients.Thanks.

This is a delightful little cookie! This recipe made 33 cookies...and they were delicious! The dough was very easy to work with. I glazed them and sprinkled them with yellow sugar. I couldn't stop eating these! My whole family loved them! Great easy recipe! I hope you like my photo!

Yum...these were great....we all enjoyed them very much. The dough was surprisingly very easy to deal with so it made for a cute twist cookie in the end. Great recipe!

Alterations


I didn't have lemon extract so I used 1 tsp. of fresh grated lemon peel. I added this to the egg mixture when making the dough. For the lemon glaze I used 1/4 cup fresh squeezed lemon juice and confectioners sugar. These alterations worked perfectly!
