Scallops Roma Recipe
This comes from "The Meeting House Inn", Henniker NH. Dividing the recipe into 8 smaller portions makes an elegant start to a meal with guests.

Ingredients
  • 1 pound sea scallops, rinsed and patted dry
  • 2 cups milk
  • 12 ounces hot (or sweet) bulk Italian sausage
  • 1/4 cup sweet onion, diced
  • 1/4 cup heavy cream
  • 1/4 cup medium salsa (mild or hot can be used as well)
  • 2 tablespoons Dijon mustard
  • 1/4 cup dry white wine
  • 1 cup Mozzarella cheese, shredded

Directions
  1. Place scallops in bowl. Pour milk over. Cover and chill two hours. (This helps tenderize the scallops.)
  2. Drain and pat scallops dry.
  3. In large skillet, brown sausage. Add onion and saute until tender.
  4. Add cream, salsa, mustard and wine to skillet. Cook until thickened.
  5. Toss scallops in heated sauce and heat one minute.
  6. Divide scallops and sauce between 4 gratin dishes. (Or 8 dishes if using as an appetizer.)
  7. Bake at 400 degrees for 20 to 30 minutes.
  8. Sprinkle dishes with cheese.
  9. Broil until cheese is melted and just lightly browned.
