Scallops Roma

- 1 pound sea scallops, rinsed and patted dry shopping list
- 2 cups milk shopping list
- 12 ounces hot (or sweet) bulk Italian sausage shopping list
- 1/4 cup sweet onion, diced shopping list
- 1/4 cup heavy cream shopping list
- 1/4 cup medium salsa (mild or hot can be used as well) shopping list
- 2 tablespoons Dijon mustard shopping list
- 1/4 cup dry white wine shopping list
- 1 cup mozzarella cheese, shredded shopping list
How to make it
- Place scallops in bowl. Pour milk over. Cover and chill two hours. (This helps tenderize the scallops.)
- Drain and pat scallops dry.
- In large skillet, brown sausage. Add onion and saute until tender.
- Add cream, salsa, mustard and wine to skillet. Cook until thickened.
- Toss scallops in heated sauce and heat one minute.
- Divide scallops and sauce between 4 gratin dishes. (Or 8 dishes if using as an appetizer.)
- Bake at 400 degrees for 20 to 30 minutes.
- Sprinkle dishes with cheese.
- Broil until cheese is melted and just lightly browned.

My mother always made scallops when I was growning up. I'll share this one with her.
