Isla de Mujeres Cherry Pie

- 2 cups canned water-pack sour cherries, drained, reserve liquid shopping list
- 3/4 cup sugar shopping list
- 4 tablespoons flour, all-purpose shopping list
- 1/8 teaspoon salt shopping list
- 1/2 cup cherry liquid shopping list
- 1/2 teaspoon almond extract shopping list
- a few drops of red food coloring shopping list
- 1 tablespoon butter shopping list
- pastry for a 9-inch, two crust pie (yours or store bought) shopping list
How to make it
- Heat oven to 425*F.
- Roll out half the pastry and line a 9-inch pie plate
- Drain cherries and reserve 1/2 cup of the juice
- Mix together sugar, flour, and salt in a saucepan
- Gradually add the 1/2 cup cherry juice; mix until smooth
- Cook over moderate heat, stirring constantly, until smooth and thickened
- Remove from heat and stir in the almond extract and red food coloring
- Pour into lined pie plate, dot top with butter
- Roll out rest of pastry and place over cherries
- Trim and flute edge
- Bake 35 to 40 minutes or until crust is brown
