Shrimp Corona

- 1-1/2 pounds large shrimp peeled and deveined shopping list
- 2/3 cup Corona beer shopping list
- 1/3 cup olive oil shopping list
- 3 tablespoons fresh lime juice shopping list
- 4 garlic cloves chopped shopping list
- 3 green onions white with some green sliced shopping list
- 2 tablespoons chopped cilantro shopping list
- 1 small fresh hot chili pepper sliced with seeds shopping list
- 10 bamboo skewers soaked in cold water for 1 hour shopping list
- Accompaniments: corn tortillas warmed, shredded lettuce, guacamole and/or salsa shopping list
How to make it
- Rinse shrimp under cold water then drain and pat dry.
- Combine beer, oil, lime juice, garlic, green onion, cilantro and chili pepper in large bowl.
- Stir to mix well then add shrimp and stir to coat evenly.
- Cover and let marinate in refrigerator at least 2 hours and up to 8 hours.
- Preheat outdoor grill then lightly grease grill grate.
- Remove shrimp from marinade and thread lengthwise on soaked skewers to catch both ends.
- Thread about 4 shrimp for each skewer then grill shrimp turning with tongs 2 minutes per side.
- Transfer skewers to serving platter.
- To assemble place shrimp in center of warm tortilla then top with garnishments of choice.
