Arroz Con Habichuelas

- 1 lb raw rice shopping list
- 1 medium chopped onion shopping list
- 1 can pinto beans or pigeon peas shopping list
- 1/2 cup Sofrito shopping list
- 1 envelope Sazon seasoning shopping list
- 1 tbsp Manzanillo olives shopping list
- 1 tsp capers shopping list
- 1 can tomatoe sauce shopping list
- 1 can chicken broth shopping list
- 1/2 lb thick bacon shopping list
- salt and pepper to taste shopping list
- garlic powder shopping list
- water shopping list
How to make it
- In a saucepan cook the bacon till crispy
- Remove and chop in small pieces
- In same bacon fat, stir fry onions till tender
- Add Sofrito for about 2-3 minutes
- Add chopped bacon, tomatoe sauce, drained beans, the raw rice and chicken broth and stir well
- Add enough water to cover the rice (about 1-1/2 inch above rice line)
- Let boil (uncovered) on medium high heat until water evaporates
- Lower heat to low and cover with ALUMINUM FOIL and cook for about 35-45 minutes
- Tip: aluminum foil is a secret so all the rice pops fast.
