Baked Spinach With Three Cheeses Recipe

Cheesy with feta, Roquefort and Edam... feel free to change up the cheeses to your liking. I use a skillet to saute the spinach.

Ingredients
  • 1 cup onion, finely chopped
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup Edam cheese, grated
  • 1/4 cup Roquefort cheese, crumbled
  • 2 tablespoons fresh dill, chopped
  • 2 tablespoons fresh breadcrumbs
  • 1 large egg yolk
  • 3 tablespoons olive oil
  • 20 ounces ready-to-use spinach, coarsely chopped

Directions
  1. Preheat oven to 350 degrees F.
  2. Lightly butter 11x7x2" baking dish.
  3. Mix onion, feta, edam, roquefort, dill, crumbs and egg yolk in large bowl.
  4. Heat oil in large pot over medium-high heat.
  5. Add spinach; saute until wilted and juices evaporate, about 3 minutes.
  6. Transfer spinach to strainer and drain well.
  7. Arrange spinach over bottom of prepared dish.
  8. Sprinkle with cheese mixture.
  9. Bake until heated through, about 20 minutes.
  10. Preheat broiler.
  11. Broil spinach and cheese until top is golden, about 2 minutes.

How do you think this would work without the roquefort?...Can't get hubby to eat it no matter how much I try...And he eats almost anything...LOL....:)


I think any cheeses (and I don't think it needs to be THREE either) would be good in this dish. I would just make sure to use the same amount of cheese and go for whatever you guys like! Good luck, wynne..
