Spinach Pasta Salad

- 10 oz penne pasta shopping list
- half pint red cherry tomatoes, halved shopping list
- half pint yellow cherry tomatoes, halved shopping list
- **I don't always have both colors, all red is fine** shopping list
- 4 oz baby spinach leaves - stems chopped off shopping list
- 1 can jumbo ripe olives, drained, slice olives in half lengthwise shopping list
- about 1/4 c chopped roasted red pepper shopping list
- 1/4 med red onion, chopped fine shopping list
- About 1/2 a keilebasa, diced small shopping list
- half pound thick cut bacon, cut into small pieces and fried crisp shopping list
- 4 oz mozzerella cheese, cut into small cubes, or, bite size balls, halved shopping list
- 1 bottle good Italian dressing (I use Ken's 3 cheese Northern Italian shopping list
- 3 T parmesan shopping list
- garlic pepper shopping list
- Salad Supreme seasoning shopping list
How to make it
- Cook pasta in water well salted with kosher salt and a drizzle of olive oil, until al dente
- Rinse well with cold water to stop the cooking process and cool the pasta
- While pasta is cooking cut tomatoes and olives into large mixing bowl
- Add red pepper, onion, kielbasa
- Add pasta when cool
- Mix together parmesan and a few shakes of garlic pepper and salad supreme
- Pour about 3/4 bottle of dressing over the pasta mixture, add parmesan mixture and mix all together well
- ((At this point, I put in fridge over night and finish before serving.))
- About half an hour before serving, fry bacon and lay on paper towel
- Tear / chop any stems off spinach leaves
- Cube cheese
- Add bacon, spinach and cheese to salad.
- Stir and taste, I usually add a little more dressing/spices as needed as the pasta will soak up some of the dressing overnight.
