Ingredients
- 10 oz penne pasta
- half pint red cherry tomatoes, halved
- half pint yellow cherry tomatoes, halved
- 4 oz baby spinach leaves
- half pound thick cut bacon, cut into small pieces and fried crisp
- 4 oz mozzerella cheese, cut into small cubes, or, bite size balls, halved
- 1 small bottle good italian dressing
- 3 T parmesan
- Garlic Pepper
- Salad Supreme seasoning
Directions
- Cook pasta in water well salted with kosher salt and a drizzle of olive oil, until al dente
- Rinse well with cold water to stop the cooking process and cool the pasta
- While pasta is cooking halved tomatoes into large mixing bowl
- Add pasta when cool
- Mix together parmesan and a few shakes of garlic pepper and salad supreme
- Pour about 3/4 bottle of dressing over the pasta and tomatoes, add parmesan mix and mix all together well
- ((At this point, I put in fridge over night and finish the next morning.))
- About half an hour before serving, fry bacon and lay on paper towel
- Tear any stems off spinach leaves
- Cube cheese
- Add bacon, spinach and cheese to salad.
- Stir and taste, I usually add a little more dressing/spices as needed as the pasta and tomatoes will soak up some of the dressing overnight.

What great timing. I just bought a large basket of mixed color cherry tomatoes and a box of whole wheat penne. Were you following me at the grocery store? Why didn't you tell me top pick up the baby spinach? I love your recipe.-Lori
