Ingredients

How to make it

  • For Biscuits:
  • In cast iron or oven safe skillet, melt 2T butter in oven while preheating to 400. See Photo
  • Combine dry ingredients in large bowl
  • Cut in shortening then add milk, as needed, til just combined.
  • DO NOT OVER MIX
  • Drop by LARGE spoonfuls into prepared skillet. They don't need to be pretty and they can touch. It doesn't matter :) See Photo
  • Bake for about 15-20 minutes until golden brown. Toward end of baking, melt the remaining butter and spoon over tops for even better browning. See Photo
  • Meanwhile, prepare Sausage Gravy:
  • Brown sausage in large skillet.
  • Do not drain.
  • Add flour to meat and stir until coated.
  • Slowly add milk and heat to just under boiling, stirring frequently, until thickened.
  • Add fresh ground pepper and cayenne
  • Serve over biscuits

    Amazing how simple real biscuits and gravy are to make, once you have an expert show you. This is one of the dishes I've always wanted to know how to do from scratch, so thank you, hon. :) If you can teach a damn Yankee like me how to make 'em, anybody can do it. Once I stopped trying to overmuscle the mixing, they came out beautifully. Well, "beautifully" may not be the word, but exactly like cathead biscuits are supposed to look. ;)

    You say to spoon some of the melted butter over the tops...the same melted butter that the biscuits are sitting in? That doesn't get absorbed by the biscuits as they cook? Am I asking too many questions?

    I've never tried putting bacon grease in my biscuits. Granny totally slacked on passing that little secret down to me... Hubby loves him some sausage gravy so we'll be having this for "breakfast for dinner" night this week. Yummy!
