Poblano Stuffed With Chorizo Shrimp And Rice Recipe

Ingredients
  • 1TBS. oil
  • 1/2 LB Mexican style chorizo diced
  • 1/2 red bell pepper diced
  • 1/2 green bell pepper diced
  • 1 jalapeno minced
  • 1 red onion diced
  • 2 TBS garlic minced
  • 1 C short grain rice
  • 1 C chicken stock
  • 1/2 C white wine
  • 1/2 C water
  • 6 poblano peppers
  • 1 LB shrimp shelled cut into 1/2" pieces
  • 3/4 C cheddar shredded
  • 3/4 C jack cheese shredded

Directions
  1. Preheat oven to 400 degrees.
  2. Place poblanos on baking sheet and bake for 15 minutes. Remove and let cool. Once cool, cut top 1/4 of poblano off and remove ribs and seeds.
  3. In medium saute pan, heat oil and chorizo, cook for 3 minutes. Add peppers, jalapeno, onion and garlic. Cook until translucent, then add rice until the grains of rice are coated with oil. Add all liquids and sir over high heat for 3 minutes. Cover and reduce heat to low. Check rice for doneness after 20 minutes.
  4. When rice is finished fluff with fork and add shrimp. Stuff each poblano with 1/6 of mixture. Place peppers on baking sheet and bake for 10 minutes. Remove from oven and cover with cheese. Broil for 3 minutes to melt and brown cheese.

Alterations


I only had frozen shrimp and no white wine so I used 1/2C water in place of the wine. Also my poblanos were small so I had extra rice that I put in a casserole and threw cheese on top and used it as a side.


OMG! I have to make this one. Sounds like BOLD flavors in there. Chedar and jack to round this up. Bookmarked and 5 forks. Thanks for sharing!
