Poblano Stuffed with Chorizo Shrimp and Rice

- 1TBS. oil shopping list
- 1/2 LB Mexican style chorizo diced shopping list
- 1/2 red bell pepper diced shopping list
- 1/2 green bell pepper diced shopping list
- 1 jalapeno minced shopping list
- 1 red onion diced shopping list
- 2 TBS garlic minced shopping list
- 1 C short grain rice shopping list
- 1 C chicken stock shopping list
- 1/2 C white wine shopping list
- 1/2 C water shopping list
- 6 poblano peppers shopping list
- 1 LB shrimp shelled cut into 1/2" pieces shopping list
- 3/4 C cheddar shredded shopping list
- 3/4 C jack cheese shredded shopping list
How to make it
- Preheat oven to 400 degrees.
- Place poblanos on baking sheet and bake for 15 minutes. Remove and let cool. Once cool, cut top 1/4 of poblano off and remove ribs and seeds.
- In medium saute pan, heat oil and chorizo, cook for 3 minutes. Add peppers, jalapeno, onion and garlic. Cook until translucent, then add rice until the grains of rice are coated with oil. Add all liquids and sir over high heat for 3 minutes. Cover and reduce heat to low. Check rice for doneness after 20 minutes.
- When rice is finished fluff with fork and add shrimp. Stuff each poblano with 1/6 of mixture. Place peppers on baking sheet and bake for 10 minutes. Remove from oven and cover with cheese. Broil for 3 minutes to melt and brown cheese.
