I used to make these muffins when I cooked at a summer camp and the kids loved them. Recipe from Camp Lutherwood.

Ingredients
  • 1 cup oil
  • 1 cup orange juice
  • 2 whole eggs
  • 1 cup oatmeal
  • 1 cup sugar
  • 3 cups flour; all-purpose
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon salt
  • 1 1/2 cups blueberries
  • cinnamon sugar

Directions
  1. Preheat oven to 400ยบ.
  2. Spray muffin pans with non-stick spray.
  3. Combine liquid ingredients in a small bowl.
  4. Mix dry ingredients in a large bowl, then stir in liquids until blended.
  5. Fold in fresh blueberries.
  6. Scoop batter into prepared pans, sprinkle tops with cinnamon sugar.
  7. Bake for 25-30 minutes or until done.
  8. Turn muffins out onto rack.
  9. Serve warm.
