White Chocolate Cheesecake Recipe

Ingredients
  • crust:
  • 1-1/4 c shortbread crumbs
  • 1/4 c ground almonds
  • 2 T sugar
  • 1/8 tsp almond extract
  • 3 T melted butter
  • filling:
  • 6 oz white chocolate-chopped
  • 3 8oz pkg cream cheese -- soft
  • 8 oz pkg Light cream cheese -- soft
  • 5 large eggs -- room temperature
  • 3/4 c sugar
  • 3 T flour
  • 1 tsp vanilla
  • 1/4 tsp almond extract

Directions
  1. Mix ingredients for the crust and press into the bottom of a springform pan. Bake at 400 for 5-6 min.
  2. Remove from oven and cool. When cool, grease the sides of the pan lightly.
  3. Melt and cool the chocolate.
  4. Mix together cream cheeses, then add eggs, one at a time.
  5. Mix in sugar, flour, vanilla, and almond extract. Stir 1 c of mixture into the chocolate, then mix all.
  6. Pour into the pan and bake at 325 for 40 min.

One type of cheesecake that I have never made is a white chocolate cheesecake. Your recipe sounds wonderful! Just bookmarking it for future reference. Thanks for posting it!
