Garlic Grilled Tomatoes

- 6 ripe red tomatoes shopping list
- Coarse salt and black pepper shopping list
- 3 tablespoons extra virgin olive oil shopping list
- 6 cloves garlic finely minced shopping list
- 2 ounces parmesan cheese shopping list
- 2 tablespoons fresh thyme leaves shopping list
How to make it
- Cut tomatoes in half crosswise then season with salt and pepper to taste.
- Heat oil in small skillet over medium heat.
- Add garlic and cook until just starting to turn golden brown about 2 minutes.
- Pour garlic and oil in heatproof bowl.
- Set up grill for direct grilling and preheat to high.
- When ready to grill brush and oil grate.
- Place tomatoes cut side down on hot grate and grill until nicely browned about 5 minutes.
- Rotate them 45 degrees after 2 minutes to create crosshatch grill marks.
- Turn tomatoes with tongs then spoon fried garlic over tomatoes and continue grilling 5 minutes.
- Transfer tomatoes to plates or platter then grate cheese over tomatoes and sprinkle with thyme.
