How to make it

  • Cut tomatoes in half crosswise then season with salt and pepper to taste.
  • Heat oil in small skillet over medium heat.
  • Add garlic and cook until just starting to turn golden brown about 2 minutes.
  • Pour garlic and oil in heatproof bowl.
  • Set up grill for direct grilling and preheat to high.
  • When ready to grill brush and oil grate.
  • Place tomatoes cut side down on hot grate and grill until nicely browned about 5 minutes.
  • Rotate them 45 degrees after 2 minutes to create crosshatch grill marks.
  • Turn tomatoes with tongs then spoon fried garlic over tomatoes and continue grilling 5 minutes.
  • Transfer tomatoes to plates or platter then grate cheese over tomatoes and sprinkle with thyme.
