How to make it

  • Heat oven to 350
  • In a 4 to 5 qt. Dutch oven,heat 1Tbs. oil over med-high heat. Add chicken and cook,turning ,about 4 mins.;transfer to plate. Add ham,and sausage;cook till lightly browned,about 3 mins. Transfer to plate with chicken.
  • Add remaining 1 Tbs oil to Dutch Oven. Add onion,celery and garlic;cook until just softened,about 4 mins. Stir in rice,tomatoes,broth,bell pepper,Cajun seasoning,bay leaves,and meats and bring to boil.
  • Cover and bake until liquid is absorbed and rice is nearly tender,about 35 mins. Add shrimp,pushing into the mixture'then cover and bake,stirring once,until shrimp is opaque,5 to 10 mins. discard bay leaves. Sprinkle with parsley and scallions.

    Turned out fantastic! I did add chorizo with the kielbasa for a bit of a different flavor and it turned out fantastic! Will be making more very soon!

    I made this for Superbowl party... it turned out utterly delicious, second (and third)helpings were requested!! Assembling all the ingredients beforehand meant minimum time cooking and maximum time watching the game!
