Jambalaya

- 2Tbs olive oil shopping list
- 12oz. boneless,skinless chicken thigh,cut into 11/2"pieces shopping list
- 1/2lb. cooked ham,cubed shopping list
- 1/2lb kielbasa,cut in 1' pieces shopping list
- 1 med. red onion,cut in thin wedges shopping list
- 2 celery stalks,finely diced shopping list
- 3 garlic cloves,minced shopping list
- 1c converted rice (like Uncle Ben's) shopping list
- 1 can(28oz) diced tomatoes shopping list
- 1c low-sodium chicken broth shopping list
- 1 green bell pepper,diced shopping list
- 2 to 3 tsp.cajun seasoning shopping list
- 2 bay leaves shopping list
- 1lb. large shrimp,peeled and deveined shopping list
- 1/2c chopped flat-leaf parsley shopping list
- 6 scallions,finely chopped shopping list
How to make it
- Heat oven to 350
- In a 4 to 5 qt. Dutch oven,heat 1Tbs. oil over med-high heat. Add chicken and cook,turning ,about 4 mins.;transfer to plate. Add ham,and sausage;cook till lightly browned,about 3 mins. Transfer to plate with chicken.
- Add remaining 1 Tbs oil to Dutch Oven. Add onion,celery and garlic;cook until just softened,about 4 mins. Stir in rice,tomatoes,broth,bell pepper,Cajun seasoning,bay leaves,and meats and bring to boil.
- Cover and bake until liquid is absorbed and rice is nearly tender,about 35 mins. Add shrimp,pushing into the mixture'then cover and bake,stirring once,until shrimp is opaque,5 to 10 mins. discard bay leaves. Sprinkle with parsley and scallions.
