Cauliflower Puree

- 1/2 lb cauliflower florets, chopped (2 2/3 cups) shopping list
- 1 garlic clove, smashed shopping list
- 1/3 cup chicken broth shopping list
- 1/2 teaspoon salt , or to taste shopping list
- Snipped fresh chives or parsley for garnish shopping list
- pepper to taste shopping list
- 2 tablespoons heavy cream shopping list
- 1 teaspoon unsalted butter shopping list
How to make it
- Simmer cauliflower, garlic, broth, and salt in a small saucepan, covered, until cauliflower is very tender, about 10 minutes.
- Purée mixture with cream and butter in a food processor until smooth or mash with a potato masher.

I'm on a low carb diet, so I eat mashed Cauliflower instead of mashed potatoes. But I haven't tried the puree. I am eager to try this recipe.
