Ok, I am a big Top Chef fan..and Ariane made this cauliflower puree for a quick fire challenge. I thought this looks yummy and quick to make. While her recipe was not posted, I think this is pretty close, except for the butter (she omits it). This ... More

This'll get them to eat their veggies. Sounds delicious. I might throw a potato in with the cauliflower, to smooth out any corners that the cream and butter didn't get at. Now is the perfect time of year for this dish.

You won't believe it, but I just made something similar the other day just by pure chance! I put my cauliflower on the stove and forgot it. It got over cooked and turned to a puree. I added some milk, seasonings and flour to it, and made cauliflower pancakes. They came out awesome, everyone gubbled them down, wondering what they were! Next time I might just make it into puree, following this recipe!

I'm on a low carb diet, so I eat mashed Cauliflower instead of mashed potatoes. But I haven't tried the puree. I am eager to try this recipe.
