How to make it

  • Peel and dice eggplant
  • Heat oil and saute' garlic in non stick frying pan, add eggplant and cook down...adding the water a little at a time
  • after eggplant is cooked, let it cool
  • add egg, cheese and bread crumbs, and mix
  • shape mixture into balls ( use an ice cream scoop)
  • place balls in greased pan
  • bake in 350 deg.oven
  • 20 to 25 minutes or until eggplant balls are firm
  • Serve with pasta

    Nice recipe! I can think of many ways to serve these. I like the water trick. It is a similar to a Middle Easter method to puree caramelized onions... Thanks for sharing... Jim

    What a great idea - love fried eggplant, and this sounds like an easy version with a lot of the flavor...I can see dipping it in marinara sauce or making an eggplant sandwich with it. Thanks for the post!
