Eggplant Balls

- 2 medium eggplants peeled and diced shopping list
- 1 egg shopping list
- 1/2 to 1 cup breadcrumbs (as much as it takes) shopping list
- grated Italian cheese shopping list
- salt and pepper to taste shopping list
- chopped garlic shopping list
- 1 tbls. olive oil shopping list
- 1/4 cup water shopping list
How to make it
- Peel and dice eggplant
- Heat oil and saute' garlic in non stick frying pan, add eggplant and cook down...adding the water a little at a time
- after eggplant is cooked, let it cool
- add egg, cheese and bread crumbs, and mix
- shape mixture into balls ( use an ice cream scoop)
- place balls in greased pan
- bake in 350 deg.oven
- 20 to 25 minutes or until eggplant balls are firm
- Serve with pasta

Nice recipe! I can think of many ways to serve these. I like the water trick. It is a similar to a Middle Easter method to puree caramelized onions... Thanks for sharing... Jim
