How to make it

  • In a large bowl, whisk pineapple juice,
  • honey, lemon juice and vinegar till smooth.
  • Add carrots, cranberries and ginger; toss to coat.
  • Cover tightly and keep in frig until serving.

    Nice spin on carrot slaw. I've been making Marion Morash's from the Victory Garden Cookbook for years. This will be a fun alternative on an old friend for warm nights.
