Gingered Cranberry - Carrot Slaw Recipe
This is a really good and palette pleasing carrot slaw . Great anytime, whether for an impromptu bbq or a weeknight supper.

Ingredients
  • 1/2 cup unsweetened pineapple juice
  • 2 tablespoons honey
  • 1 tablespoon cider vinegar
  • 3 cups shredded carrots
  • 1/2 cup dried cranberries
  • 1 to 2 tablespoons minced fresh ginger

Directions
  1. In a large bowl, whisk pineapple juice,
  2. honey, lemon juice and vinegar till smooth.
  3. Add carrots, cranberries and ginger; toss to coat.
  4. Cover tightly and keep in frig until serving.

Nice spin on carrot slaw. I've been making Marion Morash's from the Victory Garden Cookbook for years. This will be a fun alternative on an old friend for warm nights.
