Ingredients
  • 1 pound breakfast sausage
  • 1 small diced sweet onion
  • optional ingredients: diced tomatoes, sautéed green peppers and/or mushrooms
  • 2 cups grated cheddar cheese, or any cheese of your choice
  • 1 cup grated Monterey Jack cheese
  • 1 cup grated Velveeta cheese
  • 9 eggs
  • 1 cup milk
  • 2 tablespoons flour
  • a little garlic powder, red pepper flakes, cumin for seasoning (any or all are optional)

Directions
  1. Fry sausage and onion until cooked through; drain.
  2. In a generously buttered 9x13 glass baking dish, layer the sausage and onions, then any optional ingredients, then cheeses.
  3. Beat egg, milk, flour and seasoning together; pour over layers.
  4. Cover and refrigerate overnight.
  5. Bake at 350 degrees for 45 minutes or until eggs are set.
  6. Serve with salsa and sour cream, if desired.

Well my dear friend it has been a while since I have really done any touring of the recipes. I am looking for some refreshing breakfast recipes. I'm kinda bored of the same old stuff that I cook everyday. This recipe sounds real good. I give you my 5 on this recipe. Between boring breakfasts and looking for ideas for the superbowl, since i am having a houseful for that event, that is all I am doing for the moment. I really miss hearing from you. As soon as I get myself together, I will start posting again. I am redoing my kitchen at the moment and with it in disarray, so seems my life. You have a wonderful night... Cheryl
