Yum. :) These were very good. The changes I made were minor, and the best looking chops at the market were thick, so they got stuffed. Here's what I did. So, I browned the chops in my cast iron(seasoned first, rather than after with salt and pepper and a squirt of lemon juice), the next steps just as directed, but stuffed some of the goodies in each chop, too. :) Then, finished them in the oven in the same cast iron until 165 then under the broiler just to give 'em that darkness. So, other than the lemon juice, the only real difference was slightly in preparation, but that didn't change my review, or rating. These were very good! Thanks for adding them, doc!
