Guinness Beef Stew

- 5 lb beef shopping list
- 1/2 c AP flour shopping list
- salt and pepper to taste shopping list
- 5 Tbsp suet or veg. oil shopping list
- 3 or 4 onions shopping list
- 1 lb button mushrooms, halved shopping list
- 2 cans Guinness shopping list
- 2c beef stock shopping list
- 1 tsp brown sugar shopping list
- 1 tsp (dried) thyme - 1 Tbsp (fresh) thyme shopping list
- 1 tsp ground nutmeg shopping list
- 4 bay leaves shopping list
- clove of garlic shopping list
- 2 Tbsp tomato puree dissolved in 4 Tbsp water shopping list
- 2 1/2c carrots shopping list
- A few potatoes (optional) shopping list
How to make it
- Cube beef into about 1 in. squares
- Toss meat in a bowl w/ 1Tbsp oil
- Season meat w/ flour, salt and pepper
- Heat rest of oil in pot and brown meat then remove
- Add onions, tomato purree mixture and garlic to pot and cover.
- Cook 4 to 5 minutes
- reintroduce meat to the pot and add everything else except the potatoes
- Add a light sprinkle of salt and pepper and bring to a boil, then reduce.
- Cover and simmer for 2 hours
- With 45 minutes left add the potatoes
- Serve.
- Best served with mashed potatoes but if you added the potatoes directly to the stew you will be fine.
