Cheesey Creamy Chicken Casserole Recipe
For me, this is soulfood I remember Mom making. I changed the recipe slightly to make it more rich. This is always a big hit when I make it!

Ingredients
  • About 1.5 pounds boneless, skinless chicken breast.
  • Cooked stuffing to completely cover a 9X13 pan (store bought or homemade).
  • 2 cans Cream of Chicken soup (or your favorite condensed creamed soup for flavor variety).
  • About 10 slices of deli style big eye swiss.

Directions
  1. Completely cook and finely dice the chicken. Place as the first layer in the 9X13 pan.
  2. Layer the swiss cheese over the chicken.
  3. Smother the cheese with the condensed creamed soup.
  4. Completely cover with the cooked stuffing.
  5. Bake in a preheated 350 degree oven for about 30 minutes, or until bubbley.
  6. NOTE: You may want to place a drip pan on the rack below as it may bubble over a bit while cooking.

I used a deli cooked chicken.... yummmmmmy! I like the cheese addition too.


Deli cooked meaning rotisserie? Hmmmmmmmm, hadn't thought of that. The only query I would have regarding that is the strength of the seasoning on the rotisserie. Some have a very strong seasoning that may not blend so well. That said, it offers additional flavors not previously considered. It also offers different portions of meat, meaning more then just the breast; you get the wing, thigh, and leg for meat. I'd be interested to know how the rotisserie was flavored.

Seeing as it was the first time I made this I strictly followed the recipe. I think the addition of sliced baby carrots and whole pearl onions into the mix before adding the stuffing topping would add a nice flavor and round out the dish nicely.
