Mini Muffelattas With Olive Relish

Found this in one of my recipe magazines. Just love it. Makes 3 dozen appetizers, and never have to turn on the stove! The olive relish is great on chicken or fish, mushrooms, or salad. Ingredients
- MUFFELATTAS shopping list
- 1 loaf sourdough or white party bread, sliced shopping list
- 1 1/2 pounds salami - sliced 1/4 in thick shopping list
- Softened butter or margarine shopping list
- 1 1/2 pounds baby swiss or havarti cheese - sliced 1/4 in thick shopping list
- 1 1/2 pounds ham (Coppa, prosciutto, mortadella) - sliced 1/4 in thick shopping list
- 1 1/2 pounds provolone - sliced 1/4 in thick shopping list
- 1 recipe Olive relish shopping list
- OLIVE relish shopping list
- 1 c chopped green olives shopping list
- 1 c chopped black olives shopping list
- 1 7 oz jar roasted red peppers, drained and chopped shopping list
- 3/4 c olive oil shopping list
- 3 T chopped fresh parlsey shopping list
- 2 T white wine vinegar shopping list
- 1 T chopped capers, rinsed before chopping shopping list
How to make it
- MUFFELATTAS
- Spread thin layer of butter on each slice of bread
- Trim meat and cheeses into small squares to fit the bread
- Layer: Salami, Baby Swiss or Havarti, Ham, and Provolne
- Top with small scoop Olive Relish (I use a melon baller)
