Spinach Roulade

- 8 oz. frozen spinach, defrosted (room temperature), water squeezed out shopping list
- 1 tbsp. flour shopping list
- 5 eggs (whites separated from yolks) shopping list
- 1/2 tbsp. butter shopping list
- 1 tsp. ground nutmeg shopping list
- salt and pepper to taste shopping list
- 2 tbsp. grated parmesan cheese shopping list
- FOR FILLING: shopping list
- 1 tbsp. butter shopping list
- 5 oz. mushrooms, sliced shopping list
- 3 spring onions, chopped shopping list
- 14 oz. canned fire-roasted tomatoes, drained shopping list
- 1/2 tsp. dried oregano shopping list
- 1 tbsp. chopped fresh basil, or 1 tsp. dried basil shopping list
- 1/2 cup pitted black olives, chopped shopping list
- salt and pepper to taste shopping list
- 1 garlic clove, minced shopping list
- 1/2 cup shredded cheddar or muenster cheese shopping list
How to make it
- Place spinach, flour, egg yolks, butter, nutmeg, salt and pepper to taste in a food processor and process until combined. Transfer to a bowl.
- Place egg whites in another bowl and beat until stiff peaks form.
- Mix 2 tbsp. of eggwhites into spinach mixture. Fold remaining egg whites into spinach mixture.
- Spoon the mixture into a cookie sheet, lined with parchment paper and sprayed with non-stick oil. Smooth out with the spatula.
- Bake at 400F oven for 12 minutes, or until firm.
- Meanwhile, for the filling, melt butter in a frying pan and cook mushrooms over a medium heat for about 2-3 minutes.
- Add spring onions, tomatoes, olives, oregano, basil, salt and pepper to taste. Cook and stir for a few minutes longer, or until the liquid evaporates. Stir in minced garlic and turn off heat.
- When roulade is done, turn it onto a clean kitchen towel, sprinkle with parmesan cheese and roll up loosely. Allow to stand for 1 minute. Unroll and spread with filling. Top with the shredded cheese and reroll tightly. Let sit for a few minutes, then slice and serve.
