Ingredients

How to make it

  • Place spinach, flour, egg yolks, butter, nutmeg, salt and pepper to taste in a food processor and process until combined. Transfer to a bowl.
  • Place egg whites in another bowl and beat until stiff peaks form.
  • Mix 2 tbsp. of eggwhites into spinach mixture. Fold remaining egg whites into spinach mixture.
  • Spoon the mixture into a cookie sheet, lined with parchment paper and sprayed with non-stick oil. Smooth out with the spatula.
  • Bake at 400F oven for 12 minutes, or until firm.
  • Meanwhile, for the filling, melt butter in a frying pan and cook mushrooms over a medium heat for about 2-3 minutes.
  • Add spring onions, tomatoes, olives, oregano, basil, salt and pepper to taste. Cook and stir for a few minutes longer, or until the liquid evaporates. Stir in minced garlic and turn off heat.
  • When roulade is done, turn it onto a clean kitchen towel, sprinkle with parmesan cheese and roll up loosely. Allow to stand for 1 minute. Unroll and spread with filling. Top with the shredded cheese and reroll tightly. Let sit for a few minutes, then slice and serve.

The consistency of the spinach is more like an omelette, actually. It looks unusual with the spinach mixed in, but tastes just like omelette.

The wrap is very interesting. Is it the consistency of spinach tortillas, or more like a bread? All the ingredients sound wonderful. I use a similar stuffing for steak roulades. Thanks for sharing, Juels! :) ^5
