An elegant spinach roulade. The tomato and mushroom stuffing is rolled inside for a delightful presentation. If you like omelettes, you are sure to enjoy this healthy meal. Very easy, but looks like you've been cooking for hours.

Ingredients
  • 8 oz. frozen spinach, defrosted (room temperature), water squeezed out
  • 1 tbsp. flour
  • 5 eggs (whites separated from yolks)
  • 1/2 tbsp. butter
  • 1 tsp. ground nutmeg
  • salt and pepper to taste
  • 2 tbsp. grated parmesan cheese
  • FOR FILLING:
  • 1 tbsp. butter
  • 5 oz. mushrooms, sliced
  • 3 spring onions, chopped
  • 14 oz. canned fire-roasted tomatoes, drained
  • 1/2 tsp. dried oregano
  • 1 tbsp. chopped fresh basil, or 1 tsp. dried basil
  • 1/2 cup pitted black olives, chopped
  • salt and pepper to taste
  • 1 garlic clove, minced
  • 1/2 cup shredded cheddar or muenster cheese

Directions
  1. Place spinach, flour, egg yolks, butter, nutmeg, salt and pepper to taste in a food processor and process until combined. Transfer to a bowl.
  2. Place egg whites in another bowl and beat until stiff peaks form.
  3. Mix 2 tbsp. of eggwhites into spinach mixture. Fold remaining egg whites into spinach mixture.
  4. Spoon the mixture into a cookie sheet, lined with parchment paper and sprayed with non-stick oil. Smooth out with the spatula.
  5. Bake at 400F oven for 12 minutes, or until firm.
  6. Meanwhile, for the filling, melt butter in a frying pan and cook mushrooms over a medium heat for about 2-3 minutes.
  7. Add spring onions, tomatoes, olives, oregano, basil, salt and pepper to taste. Cook and stir for a few minutes longer, or until the liquid evaporates. Stir in minced garlic and turn off heat.
  8. When roulade is done, turn it onto a clean kitchen towel, sprinkle with parmesan cheese and roll up loosely. Allow to stand for 1 minute. Unroll and spread with filling. Top with the shredded cheese and reroll tightly. Let sit for a few minutes, then slice and serve.

I'm a big fan of healty cooking. Combinations of ingredients makes it very interesting flavor-wise. I'm intrigued, will try it for sure.

The wrap is very interesting. Is it the consistency of spinach tortillas, or more like a bread? All the ingredients sound wonderful. I use a similar stuffing for steak roulades. Thanks for sharing, Juels! :) ^5


The consistency of the spinach is more like an omelette, actually. It looks unusual with the spinach mixed in, but tastes just like omelette.
