Ten ingredients....one determined chef... I was given ten ingredients, to which I could only add basic pantry items, and my mission was to come up with a recipe. I call this one "FrankenMeatloaf"

  • * Indicates pantry item
  • The Meat Layers:
  • 1 lb. ground BEEF
  • 1 egg*
  • 2/3 cup bread crumbs*
  • 2 tbsp. ketchup*
  • 1/3 cup minced ONION
  • Dash Worcestershire sauce*
  • 1/4 cup shredded CHEDDAR CHEESE
  • Salt & Pepper*
  • The Rice Layer:
  • 1 tbsp. butter*
  • 1/4 cup chopped ONION
  • 1/2 cup chopped RED PEPPER
  • 1 clove GARLIC, minced
  • 1 cup cooked RICE (I used brown rice)
  • 1 cup shredded CHEDDAR CHEESE
  • The Cheesy Broccoli Layer:
  • 1 cup steamed BROCCOLI florets, chopped
  • 2 tbsp. CREAM CHEESE, softened
  • 3/4 cup shredded CHEDDAR CHEESE
  • The Mushroom Gravy:
  • 1 tbsp butter*
  • 1 10-oz. package sliced MUSHROOMS
  • 1/4 cup WHITE WINE
  • 1/4 cup chicken stock*

Directions
  1. Preheat oven to 350 degrees
  2. Combine meatloaf ingredients and set aside.
  3. For the rice mixture, melt butter in a saucepan. Add onion, red pepper and garlic and saute' until tender, about 5 minutes.
  4. Add rice and Cheddar cheese and stir until cheese is melted.
  5. For the broccoli mixture, drain steamed broccoli and add 2 tbsp cream cheese and 3/4 cup Cheddar cheese; stir until melted.
  6. Layer in a loaf pan:
  7. 1/3 beef mixture
  8. All of the rice mixture
  9. 1/3 of the beef mixture
  10. All of the broccoli mixture
  11. Top with remaining beef (don't sweat it if you miscalculate like me and don't have enough...)
  12. Bake for 40 minutes. Remove from oven and let stand at least 10 minutes. (Cover with foil to keep warm)
  13. Meanwhile, make the Mushroom Gravy - melt 1 tbsp butter in a saute pan. Add mushrooms and saute until golden, about 5 minutes.
  14. Add white wine and chicken stock, and bring to a boil; rduce heat and let simmer about 10 minutes.
  15. Stir in 2 tbsp cream cheese, mixing until melted and blended.
  16. Spoon mushroom gravy into dishes; top with 1 1/2" slice of the "meatloaf" and serve!
