Beefy Mushroom Barley Soup

- 1lb. cubed beef stew meat shopping list
- 1Tbs vegetable oil shopping list
- 2c water shopping list
- 2Tbs margarine shopping list
- 2 large carrots,diced shopping list
- 3 cloves garlic,minced shopping list
- 1 onion,chopped shopping list
- 2 stalks celery,chopped shopping list
- 1lb fresh mushrooms,sliced shopping list
- 6c water shopping list
- 3 cubes beef bouillon shopping list
- 1/4c pearl barley shopping list
- 1/4c sour cream shopping list
How to make it
- Brown small cubes of stew beef in vegetable oil over medium heat till juices become a reich brown color. Add 2c water and simmer meat while preparing vegetables.
- In large soup pot,melt margarine over medium heat. Saute carrots,onions,garlic,celery and mushrooms.
- Add meat ,6 cups water,bouillon cubes,and barley to the vegetable mixture. Coo till barley is soft. Adjust liquid and seasonings as desired. Remove from heat,and stir in sour cream. Serve immediately.
