Beefy Mushroom Barley Soup Recipe

Immediiately before serving,sour cream is stirred into this wonderful beef,mushroom and barley soup.From Alrecipes.

Ingredients
- 1lb. cubed beef stew meat
- 1Tbs vegetable oil
- 2c water
- 2Tbs margarine
- 2 large carrots,diced
- 3 cloves garlic,minced
- 1 onion,chopped
- 2 stalks celery,chopped
- 1lb fresh mushrooms,sliced
- 6c water
- 3 cubes beef bouillon
- 1/4c pearl barley
- 1/4c sour cream
Directions
- Brown small cubes of stew beef in vegetable oil over medium heat till juices become a reich brown color. Add 2c water and simmer meat while preparing vegetables.
- In large soup pot,melt margarine over medium heat. Saute carrots,onions,garlic,celery and mushrooms.
- Add meat ,6 cups water,bouillon cubes,and barley to the vegetable mixture. Coo till barley is soft. Adjust liquid and seasonings as desired. Remove from heat,and stir in sour cream. Serve immediately.
