This is a moist, light, crab cake that is easy to prepare

Ingredients
  • 1 egg, slightly beaten
  • 1/4 cup mayonnaise
  • 1/2 cup soft bread crumbs
  • 2 green onions, chopped (tops and bottoms)
  • 1 tsp. minced parsley
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 2 cans (6 oz. each) crab meat, drained, cartilage removed
  • 2 Tbl. oil

Directions
  1. Combine egg, mayonnaise, bread crumbs, onions, parsley, salt and pepper, blending well.
  2. Add crab meat
  3. Shape into 6 patties
  4. Heat oil on med. high in a frying pan
  5. Reduce heat to med.
  6. Fry each side until browned, 5-6 minutes each side
