Cous Cous Salad Recipe
A yummy cous cous salad filled with sweet dried fruits, zesty onions and garlic, and dressed with olive oil and vinegar. Serve warm or room temp, and use lemon instead of vinegar for citrusy burst.

Ingredients
  • 2 c cous cous uncooked
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 med red onion, diced
  • 2 c golden raisins
  • 2 c dried cranberries
  • 1/4 c apple cidar vinegar
  • olive oil
  • salt to taste
  • scallions (garnish)

Directions
  1. Prepare cous cous as package indicates. Set aside.
  2. Saute peppers, onion, and garlic until onion translucent. Add to cous cous. Mix in dried fruit, vinegar, and salt (if desired). Slowly add olive until salad begins to stick together.
  3. Garnish with finely sliced scallions.
