How to make it

  • Heat olive oil in a large skillet over medium-high heat.
  • Season the chicken breasts with salt and pepper.
  • Place chicken in skillet and cook until browned on both sides about 7 minutes per side.
  • Reduce heat to medium and add the butter and garlic.
  • Saute for about 3 minutes.
  • Pour in gin, vermouth, lemon juice and olives.
  • Simmer for 5 to 10 minutes OR until sauce thickens and chicken juices run clear.

    It IS wrong to double POST recipes which your friends have already posted but it is definitely RIGHT to DOUBLE the sauce if so choose, Colleen! I apologize, Pat. It won't happen again.

    Sounds good -- I'd pound the chicken breasts or make paillards to ensure quicker and more even cooking. I always hate it when the thinner part of a whole breast gets overcooked or too dry....!!
