Tempura Style Curry Shrimp Over Spinach And Apple Slaw

- Tempura shrimp shopping list
- 1lb medium/large fresh shrimp, peeled and deveined shopping list
- 1 cup flour shopping list
- 2t curry powder shopping list
- 1 cup ice water shopping list
- 1/4 cup cream shopping list
- oil for frying shopping list

- Slaw shopping list
- 1 large sweet apple or two small(I used Fuji) shopping list
- 1 head green cabbage, shredded(or 1 bag coleslaw mix) shopping list
- 1 small or 1/2 large red onion, diced shopping list
- 1/2lb bacon, fried crisp and diced shopping list
- 1/2 small bag fresh spinach, chopped shopping list
- juice from 1/2 lemon shopping list

- Dressing shopping list
- 2 ripe avocados shopping list
- 1 large cucumber peeled, but not seeded(use 2 smaller ones if you seed them) shopping list
- 2t curry powder shopping list
- cream shopping list
- salt, pepper, garlic and onion powder shopping list
- juice from 1/2 lemon shopping list
How to make it
- In food processor combine avocados, cucumber, 2t curry powder,juice from 1/2 lemon, salt and pepper and process, adding cream VERY slowly until a thick dressing consistency.(I only added a few T)
- Set aside

- Toss chopped apples with lemon juice
- In large bowl, combine cabbage, apple, onion, bacon pieces and spinach.
- Add dressing to slaw ingredients and toss until combined.
- Set aside in fridge while preparing shrimp.
- ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
- Combine flour and curry powder.
- Slowly add ice water, stirring lightly, until moistened and just combined. DO NOT over mix.
- Dredge shrimp in cream, then batter and fry at 350-375 for a couple minutes until lightly golden brown.
- Drain on paper bag or over cooling rack.
- To serve, plate slaw and top with a few of the shrimp
