Ingredients
  • 2 pounds ground venison (you can substitute beef of coarse but I use venison.)
  • 1 pound italian sausage
  • 1 (15oz) can chili beans in spicy sauce
  • 3 (15oz) cans kidney beans
  • 2 (28oz) cans Rotel diced tomatoes and green chilis
  • 1 (6oz) can tomato paste
  • 1 large vidallia onion
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 1 or 2 serrano peppers, minced (you choose...how hot do you like it?!)
  • 4 strips of bacon, crumbled
  • 4 beef bouillon cubes
  • 1/2 cup beer
  • 1/4 cup chili powder
  • 1 Tbls. worcestershire sauce
  • 4 cloves garlic, minced
  • 1 Tbls. dried oregeno
  • 2 tsp. ground cumin
  • 2 tsp. hot pepper sauce (I use Chipotle Tabasco)
  • 1 tsp. dried basil
  • 1 tsp. salt
  • 1 tsp. fresh ground black pepper
  • 1 tsp. cayenne pepper
  • 1 tsp. paprika
  • 1 tsp. white sugar

Directions
  1. Get out the biggest stock pot you have and heat over med-high heat. Crumble the ground venison and italian sausage into the pan and cook until evenly brown. (If using ground beef, I recommend draining off the excess grease. If using ground venison, I do not drain.)
  2. Add the kidney beans, spicy chili beans, tomatoes, tomato paste and mix thouroughly. Next add the onion, green and red bell peppers, serrano pepper(s), bacon, bouillon and beer. Season with chili powder, worcestershire sauce, garlic, oregano, cumin, hot pepper sauce, basil, salt, pepper, cayenne pepper, paprika and sugar. Stir to blend then simmer over low heat for at least 2 hours stirring occasionally. (I usually let this simmer for about 3 hours.)
  3. It's fabulous when eaten the same day, but it's even better if you make it a day ahead!!
  4. Ladle into bowls and top with shredded cheddar and sour cream if desired!

Now this is some serious chili cooking! What a nice combo of spices here, and how great will that venison taste in chili...yum! Love the addition of beer here, too! Can I come over for a bowl?

Is that Light Beer, Regular, or Dark. I may accidentally pour in the whole can or drink half the can :-) JJ
